Reduce the heat to low and simmer, stirring constantly, for 15 min or until the potatoes are soft.
  4. In a small mixing bowl, beat 6 eggs and 4 tbsp of milk together. Stir the mixture into the pan.
  5. Simmer for a further 10 minutes, stirring constantly, or until the mixture is thick and creamy. Remove the pan from the heat and transfer to a serving dish. Serve immediately.
