  • Olive oil 4 Tbsp
  • Onion 1, medium-sized, peeled and finely sliced
  • Garlic 2 cloves, peeled and crushed
  • Lean bacon 230 g (8 oz), sliced Red capsicums
  • (bell peppers) 2, small, white pith
  • removed, seeded and chopped
  • Tomatoes 6, medium-sized, blanched, peeled and finely sliced
  • White button
  • mushrooms 115 g (4 oz), wiped and
  • finely sliced
  • Salt 1/2 tsp
  • Ground black
  • pepper 1/4 tsp Cayenne pepper
  • A dash Dried parsley     1 Tbsp Canned corn
  • kernels 230 g (8 oz), drained
  • Eggs 4, large

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Place a pan over moderate heat and add 4 Tbsp of olive oil to it. Heat the olive oil until it’s hot.
  3. Add 1 medium-sized, peeled and finely sliced onion and two crushed cloves of garlic to the pan. Stir the mixture occasionally, and cook for around 5-7 minutes or until onions are soft but have not browned.
  4. Now, add 230g (8 oz) of lean bacon sliced and two small red bell peppers (capsicums). Stir fry the ingredients for around 10-12 minutes, or until the capsicums are soft.
  5. Add 6 medium-sized, blanched, peeled and finely sliced tomatoes, 115 g (4 oz) of finely sliced white button mushrooms, ½ tsp of salt, ¼ tsp of ground black pepper, a dash of cayenne pepper, 1 Tbsp of dried parsley, and stir. Continue cooking for another 5 minutes, or until the tomatoes start pulp.
  6. Finally, stir in 230 g (8 oz) of canned corn kernels drained and remove from heat.
  7. Now, pour this mixture into an ovenproof baking dish. Use the back of a spoon to make 4 small depressions in the mixture. Break an egg into each depression.
  8. Place the baking dish in the oven and bake for 25–30 minutes or until the eggs are set. Serve hot.
