  • Olive oil 3 Tbsp
  • Chicken 1, small, about 800 g (13/4 lb), cut into joints
  • Onions 2, peeled and finely chopped
  • Garlic 2 cloves, peeled and crushed
  • Ground turmeric 1/2 tsp Ground ginger 1/2 tsp Coriander seeds 1/2 tsp Ground cinnamon 1/2 tsp
  • Chicken stock 2 litres (64 fl oz /8 cups)
  • Ripe tomatoes 450 g (1 lb),
  • cut into wedges
  • Split yellow lentils 100 g (31/2 oz), soaked
  • for 1 hour, then drained
  • Salt 1/2 tsp
  • Ground white
  • pepper 1/4 tsp Chopped fresh
  • parsley 3 Tbsp
  • Long-grain rice 50 g (2 oz)
  • Eggs 2, beaten
  • Lemons 3, 1 squeezed for juice and 2 cut into wedges


1. Heat 3 tablespoons of olive oil in a large pan. Add chicken (cut into joints, about 800g) and brown on all sides. If necessary, fry the chicken in batches to avoid crowding the pan. Once browned, remove the chicken from the pan and set aside.

4. Pour in 2 litres of chicken stock (8 cups) into the pan. Add 450g of ripe tomatoes, cut into wedges, and 100g of split yellow lentils that have been soaked for an hour and then drained. Add 1/2 teaspoon of salt and 1/4 teaspoon of ground white pepper into the pot.

5. Bring the soup to a boil, then cover and reduce to a simmer. Let it simmer for 40 minutes.

6. Remove the chicken from the pan and shred the meat, discarding the skin and bones. Return the shredded chicken meat to the pan.

7. Add 50g of long-grain rice and 2 tablespoons of chopped fresh parsley into the pot. Bring to a boil. Then reduce the heat to simmer and cook for a further 20 minutes or until the rice is tender.

8. In a separate bowl, whisk together 2 eggs and juice from one lemon. Slowly pour the mixture into the soup, whisking constantly.

9. Serve the soup hot, topped with the remaining chopped parsley. Place wedges from two lemons on the side so that guests can choose to squeeze additional juice into their soup if they’d like.
