Ingredients

  • Desiccated coconut 225 g (71/2 oz) Castor (superfine) sugar 275 g (9 oz)
  • Egg whites 5
  • Butter for greasing
  • Glacé (candied) cherries 9, halved

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a small saucepan, mix the 225g of desiccated coconut, 275g of caster sugar, and 5 egg whites together.
  3. Place the saucepan over low heat until the mixture is warm. Keep stirring with a wooden spoon while doing so.
  4. Remove the pan from heat and leave the mixture to cool in the pan.
  5. Grease a baking tray and cover it with greaseproof paper.
  6. Using a tablespoon, spoon 18 mounds of mixture onto the greaseproof paper, leaving enough space in between for the macaroons to expand during baking. If you want, you can alternatively spoon the mixture into baking cups.
  7. Top each macaroon with half a glacé cherry, then bake for 20 minutes or until they are light golden brown. Remove from oven and leave the baking tray to cool on a wire rack.
  8. If using greaseproof paper, peel it off the baking tray and cut between the cooled macaroons. Leave a layer of paper on the base of each macaroon. Finally, store in an airtight container.
