  • Hard-boiled eggs 4, shelled and finely chopped
  • Pastry
  • Plain (all-purpose) flour 170 g (6 oz)
  • Salt a dash
  • Butter 60 g (2 oz), cut into cubes
  • Vegetable shortening 45 g (11/2 oz), cut into cubes
  • Cold water 1–2 Tbsp
  • Egg yolks 2, at room temperature
  • Salt 1/2 tsp
  • Ground white pepper a dash
  • Olive oil 250 ml (8 fl oz / 1 cup)
  • Lemon juice or white wine vinegar 1 Tbsp
  • Garlic 1 large clove, peeled and crushed
  • Chopped basil 4 Tbsp
  • Hard-boiled egg 6 slices
  • Basil 6 small sprigs


  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, sift 170 g plain (all-purpose) flour and a dash of salt. Add 45 g (1.5 oz) butter and 45 g (1.5 oz) vegetable shortening, then rub the fat into the flour until the mixture changes into fine breadcrumbs.
  3. Add 1-2 tbsp of cold water to the flour mixture, and knead the dough until it becomes smooth. Add more cold water if required. Refrigerate the dough for 30 minutes.
  4. Grease 6 tartlet tins, each 7.5 cm (3 in) in diameter with the remaining butter.
  5. Take a mixing bowl and whisk 2 egg yolks, 1/2 tsp salt, and a dash of ground white pepper until they blend well. Add 250 ml (8 fl oz/1 cup) olive oil a few drops at a time, whisking continuously. Make sure you don’t add too much oil too quickly, or the mixture may curdle. Mix in a few drops of lemon juice or white wine vinegar from time to time to avoid the mayonnaise from becoming too thick. Once it thickens, add the oil more swiftly. Add in the garlic and chopped basil and mix well.
  6. Roll out the chilled dough on a lightly floured surface to a thickness of 0.5 cm (1/4 in). Using a 10 cm (4 in) round pastry cutter, cut out 6 circles and line tartlet tins. Trim off any excess dough.
  7. Fill the pastry shells with crumpled greaseproof paper and bake blind for 15 minutes. After 10 minutes, remove the paper to let the pastry brown. Remove from oven and cool down for 30 minutes before removing pastry from the tins.
  8. Half-fill each pastry shell with finely chopped hard-boiled eggs, then spoon mayonnaise over it. Garnish each tartlet with a slice of hard-boiled egg and a basil sprig. Serve.
